This is a delicious dumpling like dessert which my late grandmother taught me to make when I was 12 years old.
You'll need:
About a cup of rice flour
2 cups of santan (thin, not thick)
1/4 teaspoon of salt
One pandan leaf
For the syrup:
A whole lump of Gula Melaka
A cup of water
One pandan leaf
Sliced ginger (optional)
How to make it:
1. In a pot, put the santan to simmer. Add the salt and pandan leaf together. When it starts to simmer, put the rice flour in and then stir continuously until the mixture forms a thick paste and resemble white pudding.
2. Then scoop it into a mould or shallow-based pan. Let it cool.
3. Next, dissolve the Gula Melaka in the water in a pot. Add in the pandan leaf so the syrup would smell fragrant. If you do not have any pandan leaves, you can also put in pandan extract sold in bottles at the supermarket. You can also add sliced ginger if you want. The syrup should not be too watery or too thick. It should be able to run off the back of a spoon smoothly. After that, let it cool.
4. To serve the dessert, scoop a big spoonful of the sum-sum (the white pudding) into a dessert bowl. Then pour some syrup on top of this and voila! it is ready to be eaten!
